Pret Vegan Chocolate Chip Cookies

Yep, I jumped on the bandwagon. Yep, they taste delicious.
This is taken from Pret’s Instagram, the only thing I changed was the type of almonds. I went for toasted and have zero regrets. I’ve added in some notes which I personally did but wasn’t in the recipe.
Ingredients:
43g caster sugar
112g light muscavado sugar
4g salt
40g toasted flaked almonds, roughly crushed
112g dark chocolate chips
205g plain flour
20g cocoa powder
1/2 tsp bicarbonate of soda
65g coconut oil, melted to a liquid
72g almond butter
100g golden syrup
40g water
Method:
Preheat oven to 180
Pour (sieved) caster sugar, brown sugar and flour and almond pieces, salt and chocolate pieces into a bowl. Then mix these together.
Mix the wet ingredients together in a bowl and add to the dry ingredients.
Mix with a wooden spoon and then bring the dough together using your hands.
Line two baking trays with greaseproof paper. Split the dough into 8 balls and lightly flatten with your hands, putting four on each tray with space around them.
Bake for around 10 minutes. The edges will feel firm but the centre very soft. These are fine to take out! Leave to cool for fifteen minutes then enjoy.
